4 boneless, skinless chicken breasts 1 cup barbecue sauce 1 cup shredded Monterey Jack cheese 1 cup shredded cheddar cheese 4 slices cooked bacon, crumbled 1 medium tomato, diced 2 tablespoons chopped green onions Salt and pepper to taste 1 tablespoon olive oil
Ingredients
01
Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear chicken for 5–6 minutes on each side.
02
Once browned, lower the heat. Brush BBQ sauce generously over each piece of chicken. Cover and cook for 5 more minutes to absorb the flavor.
03
Sprinkle both cheeses evenly over the chicken. Top with crumbled cooked bacon. Cover and cook until the cheese is fully melted, about 3–4 minutes.
04
Top each chicken breast with freshly diced tomato and chopped green onions. These add a fresh and colorful finish to the rich toppings.
05
Serve Monterey Chicken hot with your favorite sides like mashed potatoes, rice, or a green salad for a complete and satisfying meal.
06
Leftovers can be refrigerated for up to 3 days. Reheat gently in a covered skillet or microwave until warmed through for best texture.
