For the Crostini (Base): – 1 fresh baguette, sliced into ½-inch rounds – 2 tablespoons olive oil (for brushing) – 1 garlic clove, halved For the Topping: – 6 oz goat cheese, softened – 1–2 tablespoons heavy cream or milk (optional, for creamier texture) – 1 cup cherry or grape tomatoes, halved or quartered – 1 tablespoon olive oil – Salt, to taste – Freshly ground black pepper, to taste – Fresh basil leaves, chopped or torn (for garnish) – Balsamic glaze or reduction (optional, for drizzling)

Preheat oven to 375°F. Place baguette slices on a baking sheet. Brush with olive oil. Bake for 8–10 minutes or until lightly golden and crisp.

While warm, gently rub each toasted slice with the cut side of a garlic clove. This step infuses the crostini with subtle garlic flavor.

Soften goat cheese to room temperature. Mix with 1–2 tbsp milk or cream for a smoother spread. Stir until creamy and easy to apply.

Toss halved cherry tomatoes in 1 tbsp olive oil. Season with salt and pepper. Let sit 5–10 minutes to enhance flavor and release juices.

Spread a generous layer of goat cheese on each crostini. Top with a spoonful of seasoned tomatoes. Add a few pieces of fresh basil.

Serve immediately to keep crostini crisp. Ideal as an appetizer for brunch, cocktail parties, or summer events. Pair with white wine.
