You can add spinach, bell peppers, bacon, mushrooms, or herbs to create countless flavor combinations that suit your taste and diet.

Blend eggs and cottage cheese until smooth. Add seasonings and mix-ins. Pour into muffin tin or molds. Bake at 350°F for 20–25 minutes.

Let egg bites cool before storing. Keep in an airtight container in the fridge for 4–5 days, or freeze up to 2 months. Reheat before eating.
