Easy Carrot Cake Overnight Oats

– ½ cup rolled oats – ½ cup milk (any kind) – ¼ cup finely shredded carrot – 1 tbsp chia seeds – 1–2 tsp maple syrup – ¼ tsp cinnamon – Pinch of nutmeg – ¼ tsp vanilla extract – Pinch of salt – Optional: chopped walnuts, raisins, shredded coconut

In a jar or bowl, add rolled oats, chia seeds, cinnamon, nutmeg, and a pinch of salt. These spices bring classic carrot cake flavor.

Pour in milk, maple syrup, vanilla extract, and stir in finely shredded carrots. Mix until fully combined and evenly blended.

Add chopped walnuts, raisins, or shredded coconut for extra texture and taste. Stir gently to keep oats evenly distributed.

Cover the container and refrigerate overnight or at least 4 hours. Oats will absorb the liquid and soften for a creamy texture.

In the morning, give the oats a good stir. Top with more carrots, nuts, or a dollop of Greek yogurt or nut butter if desired.
