Easy Carrot Streusel Muffins

Muffin Batter: – 1 ½ cups all-purpose flour – 1 ½ tsp baking powder – 1 tsp ground cinnamon – ¼ tsp ground nutmeg – ¼ tsp salt – 2 eggs – ½ cup vegetable oil – ½ cup brown sugar – 1 tsp vanilla extract – 1 cup finely shredded carrots Streusel Topping: – ¼ cup all-purpose flour – ¼ cup brown sugar – ½ tsp cinnamon – 2 tbsp cold butter, cubed

Whisk together flour, baking powder, cinnamon, nutmeg, and salt in a large mixing bowl. This forms the base of the muffin batter.

In another bowl, mix eggs, oil, brown sugar, and vanilla extract. Stir until smooth, then add finely shredded carrots.

Mix flour, brown sugar, cinnamon, and cold butter using your fingers or a fork until crumbly. Set aside for topping.

Fold the wet mixture into the dry ingredients. Scoop batter into muffin cups and sprinkle with generous streusel topping.

Bake at 350°F for 20–25 minutes, until a toothpick comes out clean. Cool slightly before serving warm or storing.
