– 2 ripe bananas (mashed) – 1 ¾ cups milk (dairy or non-dairy) – 1 egg – 2 tbsp maple syrup – 1 tsp vanilla extract – 2 cups rolled oats – 1 tsp baking powder – ½ tsp cinnamon – ¼ tsp salt – 1 cup chopped strawberries (plus extra for topping)

In a mixing bowl, mash 2 ripe bananas until smooth. This adds natural sweetness and moisture to your baked oatmeal.

Add milk, egg, vanilla, and maple syrup to the mashed bananas. Stir well until the mixture is smooth and evenly combined.

Stir in rolled oats, baking powder, cinnamon, and salt. Fold in chopped strawberries for fruity bursts in every bite.

Pour the mixture into a greased baking dish. Top with more sliced strawberries and bake at 350°F for 35–40 minutes until golden and set.

Let the baked oatmeal cool for 5–10 minutes before slicing. This helps the pieces hold together when serving or storing.
