– 1 to 1½ cups grated zucchini (well-drained) – 1 1/2 cups all-purpose flour – 2 eggs – 1/2 cup vegetable oil – 3/4 cup sugar – 1 tsp vanilla extract – 1/2 tsp baking soda – 1/2 tsp salt – 1/2 tsp cinnamon – 1/4 tsp ground nutmeg – Optional: 1/2 cup chopped walnuts or chocolate chips

Grate 1 to 1½ cups of fresh zucchini (about 1 medium). No need to peel—just squeeze out excess moisture before mixing.

Whisk together eggs, sugar, oil, and vanilla until smooth. This creates a rich base that keeps the loaf moist and tender.

In a separate bowl, mix flour, baking soda, cinnamon, salt, and nutmeg. Stir into the wet mixture just until combined.

Gently fold grated zucchini into the batter. Optional: Add 1/2 cup of nuts or chocolate chips for extra flavor and texture.

Pour batter into a greased 9x5-inch loaf pan. Bake at 350°F for 50–60 minutes until a toothpick comes out clean.

Let bread cool in the pan for 10 minutes, then transfer to a rack to cool completely. This helps set texture and flavor.
